Scenario: Sugar Cube Corner had a huge catering order, and they needed a little help. So, Pinkie called on Joe to prepare one of the requested cakes. (A sub-contractor deal?) Anyway, Joe is delivering the cake, and Pinkie is amazed at his work! She thought he only did doughnuts!
I'm not sure this is grounds for a ship, but it could definitely be the start of a lasting friendship, and certainly a good professional relationship.
I would love the show to explore that theme of some of 6 mane having a special somepony or at least hint. but it's very difficult to do that with main characters : it freezes the stories (or you have to break the relationship and then to do soap), and can polarize watchers between ones hating the somepony and others loving it. Or inject in the story some consideration people can object to. A pity really, because I think some valuable lesson could be taught.
Obviously, a writer should be careful to not stir the franchise toward boys characters, everything should stay from the point-of-view of girls (Spike is enough). And Pinkie Pie's point-of-view is always great
When I asked the commission, my goal was to use an established character she would have something in common and not to satisfy my own fantasy (like a pinkidash because pink and blue are nice colors to mix in a drawing).
Joe was my favorite candidate : he's a baker like Pinkie Pie giving room to both characters to connect and share, he is already written in the show as a likable but firm character: a personality who could conflict with/interest Pinkie.
And in the episode "mmmmystery", I found cute the way she's imagine him in a tuxedo like a dashing james bond spy when Twilight only see someone "scruffy". But Rarity confirms Pinkie Pie is not totally disillusioned So I use that hint, like "and if in fact Pinkie Pie saw something in him ?"
